Every fish in this listing was hatched, raised, and harvested at Turtle Creek Aquaculture's farm in Palacios, Texas, on the shores of Matagorda Bay. We pump in saltwater from the Gulf, raise our redfish at low stocking densities on a clean vegetarian-forward feed, and harvest by hand on the morning each shipment goes out. The fish you receive was swimming in our pond yesterday morning.

How to Cook
Texas redfish has firm white flesh with a mild, slightly sweet flavor and large flakes. It stands up to high-heat techniques — blackening, grilling, smoking, broiling — and also takes beautifully to gentler preparations like ceviche, poaching, or steaming. Our test kitchen recommends pan-searing skin-on fillets in cast iron at high heat, three minutes skin-down and one minute flesh-down, finished with a squeeze of lemon. For whole fish, roast at 425 °F for 25 minutes per pound.
